Cinnamon Bun Pancakes

Today is National Pancakes Day!
and what better excuse to have breakfast for dinner!
Better yet, Pancakes for dinner!

Tonight's pancakes can't be ordinary...
I searched highs and lows.
Until I came up with! drum roll please...
Cinnamon Bun Pancakes!!
Just in case you haven't realized it yet, I love goey, sticky cinnamon rolls


adapted from Tasty Kitchen

Cinnamon Bun Pancakes
1 1/2 cups flour
3 tablespoons sugar
1/2 teaspoon salt
4 teaspoons baking powder
1 tablespoon cinnamon
2 eggs, beaten
1 cup almond milk
2 tablespoons maple syrup
1/4 cup melted butter
1 tablespoon vanilla

In a medium bowl, mix your dry ingredients

Whisk the dry ingredients together.

In a larger bowl,  mix the wet ingredients
stir in the dry ingredients

Preheat your griddle or sautee pan as you would for regular pancakes
Cook 1/4 cup at a time. Brown each side

  They are ready to eat!
But cinnamon buns are not complete without glaze

Make the glaze!
1 cup confectioners' sugar
2 tablespoons melted butter
3 tablespoons almond milk
Whisk the ingredients together until smooth and have a pouring consistency. 
If batter is too thick add more milk.
... easy as 1, 2, 3!


Go make them now!
You'll thank me later, 
your kitchen will smell good,
and you'll be in sugar heaven as your sink overloads with dirty dishes...

For The Love Of Cupcakes

Hello there!
Happy New Year!
Ok, I know I'm late. More than a month late to be exact! Then again, this is my first post of the year, so I can get away with it!

Let me start by apologizing for my hiatus... At some point, I even thought of closing down the blog.
But don't worry! Me2writes is here to stay! Lots of changes are coming! Please bear with me...

As a warm welcome back treat, let me share some cozy sweets with you.

So, the other day and like any other day, I wanted some cinnamon rolls.
 I made these!

What started out as simple mini cinnamon rolls...


Oh yeah! I took cinnamon rolls to a whole new level! I'm talking the cupcake level!

Cinnamon Roll Cupcakes

Makes 24 cupcakes
1 packet dry active yeast
1/2 cup granulated sugar, divided
1 cup warm milk
2 eggs, room temperature
1/3 cup butter, melted
1 tsp. salt
4 1/2 cups bread flour
1 cup brown sugar, packed
2 1/2 Tbsp. ground cinnamon
1/3 cup butter, softened

1. Dissolve the yeast and 1/4 cup of the granulated sugar in the warm milk in a large bowl and let stand for about 10 minutes until foamy.
2. Mix in the eggs, butter, salt, and other 1/4 cup of granulated sugar. Add flour and mix until well blended and the dough forms a ball. Put in a bowl, cover and let rise in a warm place until doubled in size (about one hour).
3. After the dough has doubled in size, turn it out onto a lightly floured surface, cover and let rest for 10 minutes. In a small bowl, combine brown sugar and cinnamon. Line cupcake pan with cupcake liners (I like to double them up because these cinnamon rolls are so moist), and lightly spray over the top of them with cooking spray.
4. Roll dough into a 12×22 inch rectangle. Spread dough with 1/3 cup butter and sprinkle evenly with sugar/cinnamon mixture. Roll up dough and cut into 24 rolls.
5. Place each roll in a cupcake liner. Cover and let rise until nearly doubled, about 30 minutes. Meanwhile, preheat oven to 400 degrees Fahrenheit.
6. Bake rolls in preheated oven until golden brown, about 10-12 minutes. Let rolls cool completely before frosting (or else the frosting will melt and slide off).
Frosting
2 (8-oz.) packages cream cheese, softened
1/2 cup butter, softened
2 1/2 cups sifted confectioners’ sugar
2 tsp. vanilla extract
In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners’ sugar. Store in the refrigerator after use.

Easy Like [Dinner]

I love pasta and I'm not ashamed of it.
I think pasta is one the most versatile food out there. Too bad it got such a bad rep the past couple of years...

Earlier, I was browsing through The Edible Perspective (a healthy living blog) and came across this!
An easy pasta bake! I decided to re-create at home.

You Know It's Wednesday...

Happy Hump Day!
I hope your day is going smoothly

Mine? Not so much...
My day started out with my car playing a trick on me!
Yes! My own car tricked me!
What is this world coming to? 
This morning as I parked in the lot at work, I  made a little dance.
The I'm-early-and-I-beat-my-own-record dance to be specific!
Only to find out that I was deceived! The time in my car is running behind! 
A whole 15mns behind! 
Say what!?
Arrggg!

Then for lunch I decided to go to Subway.
Being a sucker for a good deal, I got the $5 footlong deal.
Ate half and saved the other half for dinner.
Totally forgetting that all the ingredients will turn my Veggie Delite soggy.
D'Oh!
Brace yourself for my dinner!
Yes! I can be very disturbing!

Soggy but good! Especially if washed down with some Homemade Iced Tea
Then I got on the phone with Comcast. My Internet connection is acting up again!
After what seems like forever of my time spent troubleshooting, the Tech Dude finally told me that the problem was from my modem.  All I have to do is return it for another. 
Unfortunately, of course, the store was closed by the time we were done our little convo.
Double Arrrgggg...

However, I believe that every cloud has a silver lining!

I Make Mine At Home!

About two weekends ago, I stopped by a Chinese Take-out.
I saw the unthinkable!
They were making their famous Homemade Iced Tea with powdered mix!
Oh no!
I remember back in college how I had a discussion with my roommate on how easy and inexpensive it was to make iced tea. We even used the Homemade Iced Tea from the Chinese Take-Out as a good example on how easy it was to make a profit. 
Then, I walked in on this!
Oh no!

So, today as I'm sitting on my kitchen floor and watching a commercial for McDonald's Sweet Tea, I decided to make my own, right there and then!

I used Green Tea for some added goodness
and ended up with this baby!
 Free of charge and authentically homemade!

You should drop everything you're doing and go make yourself some!

Super G's Summer Drink
2 Orange Passion fruit & Jasmine Lipton Green Tea bags (or any flavors your heart desires)
2 Tbsp Agave Syrup
frozen fruits
water (about 2-3 cups)

Direction
Bring water to a boil over medium heat. Add tea bags and remove from stove. Cover the pot and let tea steep, about 10minutes. In the meantime, get your pitcher ready. Add your frozen fruits in your pitcher. Add ice, enough to fill the pitcher halfway. Now add your brewed tea. Add the Agave Syrup. Stir. Put in the fridge. If you can't wait that long, enjoy now!

makes about 2-3 nice tall glasses!
